Ingredients (serves 3–4)
- 4 medium zucchinis
- 2 cups Bolognese sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- Salt & pepper to taste
- Optional: fresh basil or parsley for garnish
Instructions
- Preheat oven to 180°C (350°F).
- Slice zucchinis in half lengthwise.
- Scoop out the center flesh with a spoon to create “boats.”
- Lightly brush with olive oil and season with salt and pepper.
- Place zucchini halves on a baking tray (cut side up).
- Bake for 10 minutes to soften slightly.
- Heat a pan over medium heat.
- Add a bit of olive oil and sauté garlic for 1 minute.
- Stir in your Bolognese sauce and cook for 3–5 minutes.
- (Optional) Chop some of the scooped zucchini flesh and mix it into the sauce for extra texture.
- Spoon the Bolognese mixture into each zucchini boat.
- Top with mozzarella and sprinkle Parmesan on top.
- Return to the oven and bake for 15–20 minutes, or until cheese is melted and golden.
Serving tips
- Garnish with fresh herbs like basil or parsley.
- Serve with a side salad or crusty bread.
- Add chili flakes if you want a bit of heat
